When making your reservation, you can choose between two options. Both begin at the Palais Bab Sahra Fez restaurant and include an English-speaking guide, all ingredients for the class, the prepared meal, coffee and tea.
Participants will choose between three traditional tagines: lemon chicken tagine, chicken with vegetables, or vegetables only. The class starts by arranging the ingredients in the tagine and cooking over low heat. Participants will also learn how to prepare traditional tea. After the lesson, they’ll enjoy tea with traditional pastries on the rooftop, overlooking the medina of Fez. Finally, they’ll taste their own tagine. Schedule: this option runs at 12:30 pm and 6:30 pm.
Our first step will be to gather the right ingredients. For our recipe, we will need fresh produce, so we will head to a local souk in the heart of Fez’s medina. At the market stall, we will select the freshest items, from meats and vegetables to fruits and spices. With our shopping complete, we will return to the restaurant to begin cooking. Aprons on. During the class, we will learn to prepare different versions of the classic tajine, a cornerstone of Moroccan cuisine. From chicken with olives to meat with plums, even experimenting with a different style of couscous. Of course, we will also enjoy freshly brewed Moroccan tea and learn how to prepare it ourselves. Once everything is ready, we will sit down for a well earned meal. Served with a fresh salad and seasonal fruit, enjoy one of the most memorable dishes of your trip to Morocco, the one you made yourself.
